Kusina Moderne: A Contemporary and Uncomplicated Dining Experience

Friday night for a tita at heart means heading straight home after work to avoid traffic and get ready to bed ASAP to workout on Saturday morning. Traffic around the metro, especially since holiday season is approaching, can be exhausting. Let's not forget chances of getting hangry uncontrollably, too.


But, since it's going to be a long weekend, this tita decided to go out on a Friday night and brave the streets of Poblacion, Makati to try out Kusina Moderne.


It was a cold evening in Poblacion but upon entering the restaurant, the staff gave a very warm welcome and directed me to where the Hey Manila fam were.


The place gives that humble and a bit rustic vibe. As someone who is slowly getting into a minimalism, the simple interior of Kusina Moderne is pleasing to look at. Though having a few indoor plants could add more life to its space.


Oh, and what else to like is that the comfort room is neat and didn't smell even if it's a common CR. Even if it would be nicer to have separate comfort rooms, seeing that the cleanliness is prioritized makes you appreciate the place even more.


The menu is straightforward and it's a nice touch to have the parts of the menu translated to Tagalog words.

For starters, the Mechado Tacos gave a good impression. Squeezing that kalamansi and getting its juice complements the taste of the meat and makes it more flavorful. With every bite, you can taste the tenderness of every muscle fiber of the beef (No litid!).

The entrée, Binagoongang Baboy did not fail to standout with its plating. I got curious with the puree where the pork belly is seated to. The roasted eggplant puree gives off that smoked flavor with a smooth texture to it. The pork belly was roasted perfectly, having that crunchy skin with minimal fat. The Binagoongan sauce wasn't too salty and had the right amount enough for the whole dish.

Tasting its component one by one is such a delight; more so when you taste everything together. Combining the roasted eggplant puree, the green mango salad, the roasted pork belly and the Binagoongan sauce will make your order rice right away.

The dessert was the perfect way to complete the whole food coma experience. The Cheesecake Flan is definitely a must try. Honestly, I was skeptic with desserts with fresh mangoes as some would add unripe ones. But with the Cheesecake Flan, you can taste fresh and ripe mangoes. The crushed biscuits and nuts were a good combination and flavor to the smooth texture of the flan and whipped cream.

The Chocolate Bar Brownie is perfect for chocolate lovers! The layer of light and smooth chocolate mousse with the rich brownie go together perfectly. You can taste the richness of dark chocolate with each bite, not too sweet nor too dark but chocolatey-rich goodness. They use Davao chocolate and tablea for this dessert. No wonder why Davao chocolate can compete internationally and bag awards.

The whole dining experience made it worth the traffic on a Friday night. Kusina Moderne gives you the experience of Filipino food you get to taste from your Lola's cooking yet re-imagined and with a new twist.
